Protein Pancake

I’m going to let you in on my breakfast secret. I eat this pancake every morning and it so easy to make. It has 20 grams of protein which gives me plenty of energy to get my 2 kids off to school and teach my Barre3 classes. I promise you’ll love it. Add a mashed banana to the mixture for extra sweetness and potassium.

Ingredients

• 1/2 cup of gluten free oats

• 1/2 cup egg whites

• Berries

• Pure or sugar free maple syrup (optional)

Directions

1. Mix oats and eggs in a bowl and pour into a small pan coated with cooking spray. You may need to spread the oats around with a spatula to cover the pan.

2. Cook evenly on both sides (until brown) and serve with berries and maple syrup.

Serves 1
