Beet and Tomato Stack

We love beets. This recipe is a lot of fun to make and eat! It’s like putting together a piece of art or building an installation. Have fun with this. Stack how you like or use my tower as inspiration.

Ingredients

• 3 large beets

• 3 large tomatoes (any color)

• 8 oz fresh Mozzarella

• Balsamic glaze

Staples: Spices – basil leaves

Directions

Preheat oven to 400 degrees

1. Cut leaves and stems off beets. Wrap each beet in foil paper and place in oven for 60-80 minutes. The skin should be able to peel easily. Set aside to cool and peel. Use latex (non-latex) or rubber gloves to avoid messy hands.

2. Slice beets, tomatoes, and cheese into 1/4 inch slices.

3. Stack slices, drizzle with balsamic glaze and top with a pinch of fresh or dried basil.

Serves 4
