Edamame is a great afternoon snack. They are high in protein, low in fat and full of fiber. My husband and I love edamame. We were visiting Miami one year and we were served an edamame dish with lime juice and sea salt at a restaurant in Lincoln Mall. It was incredible! This recipe is inspired by that trip but I added a bit of chipotle for some extra zing.
Ingredients
• one 10-12 oz package of shelled edamame (cooked as per directions)
• 1/2 lime (squeezed)
Staples: Spices – 1/4 tsp chipotle, 1/8 tsp ground pepper, 1/4 tsp salt
Directions
1. Cook Edamame as stated on package.
2. In a small bowl combine lime juice and spices.
3. Place edamame in a medium bowl and pour sauce on top. Toss and serve.
Serves 4
