Buckwheat Pancakes

Buckwheat is a fruit seed that can be substituted for grains and safe for people who are sensitive to wheat. The flavor of buckwheat is very strong and “nutty”. Buckwheat is higher in fiber than brown rice flour so I thought I’d give it a try! Feel free to substitute half of the amount of flour with another gluten free option to dull the taste a bit.

Ingredients

• 1 cup of buckwheat flour

• 2 tbsp light brown sugar

• 1 cup plus 2 tbsp of milk (your choice)

• 1 large egg

Staples: 1 tbsp olive oil for frying

Directions

1. Mix ingredients in a large bowl

2. Heat olive oil in skillet and fry pancakes 4 at a time flipping when you start to see bubbles form.

Makes about 12 pancakes
