Vegan Chicken Salad

This smokey and sweet dish will be sure to satisfy your lunch craving. It is filled with simple, nutritious ingredients and spices and takes about 2 minutes to make. Enjoy on top of a salad or in a sandwich. We just got our delivery from and it was filled with delicious O’Doughs breads and bagels. I am going to enjoy this vegan chicken salad on some toast tonight. How will you eat yours?


• 1 15oz can of chickpeas

• 1/3 cup of dried cranberries

• 3 tbsp vegan mayonnaise

• 1 chopped green onion

Staples: Spices – 1/2 tsp paprika, 1/2 tsp celery seed, 1/4 tsp ground pepper, 1/4 tsp sea salt


1. In a large bowl slightly mash chickpeas. You want some still whole.

2. Add the rest of the ingredients and stir.
