Hamantaschen

Hamantaschen are pastries enjoyed on Purim. They are triangular in shape and typically filled with jam, chocolate, dates or poppy seeds. They are very easy and fun to make! My children’s Sunday school class is making hamantaschen today so I provided them with nut and gluten free dough so that they can participate. Try this recipe below to make your own. Cup4Cup Gluten free flour is my favorite. You would never know it’s gluten free and can replace flour in most recipes.

Ingredients

• 1 cup butter softened (not melted)

• 1 egg

• 1/2 cup sugar

• 3 cups Cup4Cup flour sifted with 1/2 tsp baking powder

Staples: 3 tbsp water, 3 tsp vanilla

Filling: Jam, chocolate chips, sunbutter, dates or poppyseeds.

Directions

Preheat oven to 350 degrees

1. In a large bowl mix butter, egg, sugar, water and vanilla.

2. Add flour mixture and form into dough. Cover bowl with saran wrap and chill for 20-30 min.

3. Separate dough into 3 pieces and roll out rolling pin and extra flour to avoid sticking. Cut dough into circles with a cookie cutter or glass.

4. Add filling to the center of the circle and fold over each side to form a triangle. Pinch edges firmly together.

5. Bake for 20 min.

Makes about 30-36 hamantaschen
