Maple Cinnamon Brown Rice Pudding

Who doesn’t love rice pudding. I remember my mom making rice pudding every Sunday night with our leftover rice from the Chinese dinner that evening. It was so good, warm and comforting. There is something about rice pudding that is just so soothing. This recipe is on the healthier side and uses very few ingredients with one simple step! Follow the directions below…

Ingredients

• 2 cups cooked brown rice

• 2 cups skim milk

• 4 tbsp maple syrup + 1 tsp vanilla extract

• 1 tsp cinnamon

Directions

1. In a medium pot combine the rice and milk. Bring to a boil and then turn down heat to medium/low. Cook rice and milk for 15 min. The mixture should thicken. Stir frequently. Do not overcook or the pudding will become too hard.

2. Add maple syrup, vanilla and cinnamon during the last 5 minutes. Let pudding sit for 5-10 minutes before serving.

Serves 4
