Enjoy this individual light and fresh salad any time of the day this summer. You can double or triple the recipe if you are serving a family.
• 2 handfuls of your favorite leafy green
• 1 can of tuna packed in water
• 1/2 green onion chopped + 1/4 cup cilantro leaves
• 1/2 cup of carrots
• 1 tsp olive oil
• 2 tsp white balsamic vinegar
• Salt and pepper to taste
1. Place all of the salad ingredients in a large bowl. In a small bowl whisk the olive oil and vinegar. Pour over salad and toss. Enjoy!
