Black Bean Brownies

Yes!! Brownies made primarily of black beans. I know what you’re thinking but take a chance on these guys. I think you will be pleasantly surprised! They are full of fiber and I made this version sugar free. My daughter Golda constantly complains of “sugar belly” after eating desserts or anything sweet for that matter so I thought I’d try something that won’t upset her stomach. G-d willing! She definitely has the sensitive stomach out of all of us. Do you have anyone in your family that is sensitive to certain foods? What changes have you made to help?

Give these guys a try and let me know what you think! They are nut free, gluten free, grain free, dairy free and sugar free and require only 2 steps. Easy peasy!

Ingredients

• 1 15 oz can of black beans (drained and rinsed)

• 3 eggs

• 1/2 cup cocoa powder

• 1/2 cup Wholesome Live Sweetly All Natural Zero Sweetener (You can replace sweetener with your favorite sweet ingredient i.e. honey, cane sugar, or pure maple syrup)

Staples – 2 tsp vanilla and 1 tsp baking powder

Directions

Preheat oven to 350 degrees

1. Using a food processor purée beans. Add eggs, cocoa powder, sweetener, vanilla and baking powder and continue to pulse.

2. Coat an 8 x 8″ baking dish with cooking spray and pour batter inside. Bake brownies for 30 – 40 minutes or until a toothpick comes out clean and the brownies start to separate from the baking dish. Remove, cool, slice and serve. Top with your favorite sugar free frosting!

Makes 9 large brownies.
