Crispy Quinoa Chicken Bites

Hi everyone! I’m excited to share a new chicken tender recipe with you. Chicken fingers are always a hit in our house and I wanted to do something a little different. These bites are made with corn starch which is a great alternative to flour as it’s naturally gluten free. I also feel that it gives the bites a little bit more crunch! I finished by coating the bites in cooked quinoa. Quinoa is rich in protein, iron, manganese (antioxidant), magnesium, and lysine (great for tissue growth and repair). I always love to use ingredients that are high in nutrients. Don’t get me wrong. I enjoy panko crumbs, gluten free flour, and white rice but when I can sneak in some vitamins into a recipe I will!! I whipped up some Orange Ginger Dipping Sauce (recipe below) but feel free to dip your bites into your favorite sauce. I hope you enjoy these Crispy Quinoa Chicken Bites!

Ingredients

Crispy Quinoa Chicken Bites

• 4 chicken breasts cubed

• 3/4 cup cornstarch

• 2 – 3 eggs

• 1 cup quinoa (cooked according to directions on the package)

Staples: 1/2 tsp salt, 1/4 tsp pepper

Orange Ginger Dipping Sauce

• 1 orange (juice and zest)

• 2 tbsp honey

• 2″ piece of ginger + 1″ garlic clove (grated)

• 1 tbsp soy sauce + 2 tbsp rice wine vinegar

• 1/2 cup luke warm water with 2 tsp corn starch whisked together

Directions

Crispy Quinoa Chicken Bites

Preheat oven to 425 degrees

1. Place 3 shallow bowls in a line on your counter. In the first bowl place the corn starch, salt, and pepper and mix. In the second bowl whisk the eggs, and in the third bowl add the cooked quinoa.

2. One at a time dredge the chicken cubes into the corn starch, then dip in the egg, and finish by coating in the cooked quinoa. Place your cubes onto a baking sheet covered in parchment paper and coated in cooking spray.

3. When done, place the baking sheet in the oven and bake for 20-25 minutes. Remove and serve!

Orange Ginger Dipping Sauce

1. In a small sauce pan whisk everything but the water and corn starch. Bring to a boil. Reduce the heat and add the water/corn starch mixture. Whisk until thick. Remove and place into a serving bowl.

Serves 4
