My husband is on a Whole30 type diet and has cut out all dairy, grains, and sugar. By eliminating these foods he has lost weight, stopped snoring, and feels a lot more energetic! All good things 🙂 I don’t believe in cutting out specific foods unless you have a diagnosed allergy but if cutting out certain foods makes you feel better than go for it! As long as you’re eating a balanced diet full of essential vitamins and have discussed it with your physician. It has been challenging coming up with snacks for him but these muffins were a hit! Hope you like them. #allergyfriendly
Ingredients
• 2 1/2 bananas
• 1/4 cup coconut oil
• 1/2 cup Swerve Sweetener
• 2 eggs
• 1/2 cup casava flour
• 1/2 cup flax seed flour
Staples: 1 tsp baking powder, 1 tsp baking soda, and 1/4 tsp salt
Directions
Preheat oven to 375 degrees
1. In a large bowl mash bananas. Add coconut oil, sweetener, and eggs and mix well.
2. Add cassava flour, flax flour, baking powder, baking soda, and salt. Mix well!
3. Coat a 12 cup muffin tin with cooking spray. Evenly divide batter into cups. Place in the oven and bake for 15 min or until golden brown. Remove and allow to cool. Serve and enjoy for breakfast or a healthy snack.
