Aron has baseball games all afternoon and it’s time to fill up on lots of energy! No better way than with these Gogi Berry Balls. They’re packed with protein from the chickpeas, quinoa flakes, and gogi berries. They are sure to fill the hunger gap and provide him with an energy boost! If you’re looking for a healthy protein filled snack make these!! They’re sweet, soft, colorful, flavorful and filling.
Ingredients
• 1 15 oz can of chickpeas
• 1/3 cup of honey
• 1 cup of quinoa flakes
• 3/4 cup dried gogi berries
Optional: 1/4 cup shredded coconut
Directions
1. In a food processor blend chickpeas and honey to form a paste
2. Transfer mixture to a mixing bowl and add quinoa flakes. Stir. Add dried gogi berries and continue to mix.
3. Using a tbsp form mixture into balls. Pour shredded coconut into a shallow bowl or plate and roll balls to coat.
Makes 14 balls
