One Bowl Apple Banana Muffins

It took a few batches to get these no mess muffins just right! They are moist, light, fluffy, sweet, and fragrant. Enjoy these easy peasy One Bowl Apple Banana Muffins for breakfast or a light snack. I like to toast mine the next day and enjoy with cream cheese or yogurt.

Ingredients

• 1 1/2 bananas

• 1/4 cup vegetable oil

• 2 eggs

• 1/2 cup cane sugar

• 1 cup Cup 4 Cup Gluten Free Flour

• 1/2 cup chopped apple

Staples: 1/4 tsp salt, 1 tsp baking soda, 1 tsp cinnamon

Directions

Preheat oven to 350 degrees

1. In a large bowl mash the bananas. Add the vegetable oil, eggs, and cane sugar. Mix well.

2. Pour the flour, baking soda, and salt into the wet mixture and stir. Add the cinnamon and combine. Lastly, fold the chopped apple into the batter.

4. Coat a muffin tin with cooking spray. Evenly distribute the batter into the muffin cups. Place the tin into the oven and bake for 25 minutes.

Makes 12 muffins
