Do you ever wonder what to do with leftover quinoa and overripe bananas? Well look no further than this easy and super healthy recipe. These bites were a huge hit with my son, daughter and husband. Every time they walked by the tray they would pop one in their mouth. I couldn’t get mad because they’re filled with all natural ingredients and zero added sugar! Snack away!
• 1 cup of cooked quinoa
• 2 mashed bananas
• 1 egg
• 1/2 cup of raisins
Staples: 1/2 tsp vanilla extract, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp allspice
Preheat oven to 350 degrees
1. Mix quinoa and mashed bananas in a large bowl. Add egg and spices. Fold in raisins. Grease a mini muffin tin. Evenly fill the cups and bake for 35-40 min. Allow to fully cool before removing.
